A lot of my clients find hitting their daily protein intake to be quite difficult, especially in the mornings there is only so many times you can eat protein oats or eggs! Freshen things up with this light but high protein meal that you can easily adjust to fit your macros, goes great with the rice or even just on its own!
High Protein Tofu Scramble
Ingredients
1 cup Spinach
12 oz (340g) Firm tofu
1 tsp Olive oil
1/2 cup cooked rice (you can use instant if you like)
1/2 tsp Onion powder
1/2 cup Red capsicum (chopped)
1/2 cup Brown onion (chopped)
1/2 tsp Turmeric (ground)
Directions
Add olive oil to pan over medium heat
Cook chopped spinach, onions, and bell peppers until soft, about 2 minutes.
Add in crumbled tofu (you can do this by hand, or with the back of a spatula). Cook until the tofu is hot and most of the water has evaporated.
Stir in the spices, season with salt and pepper, then serve with rice.
